This is the roll recipe a friend gave me years ago and when I realized it made the best cinnamon roll dough I ran with it and never looked back!
For the dough:
1/2 cup warm water
4 tsp quick rise yeast
1 Tbl sugar
(combine these in mixer and let it foam)
1 cup melted butter
2 cups milk (I heat the butter and milk together)
1 Tbl salt
1 Cup sugar
6 eggs
9 cups of flour (add 4 then mix it all together then add the next 5)
Blend in mixer till combined then add 5 more cups of flour, let it knead in the mixer for 5-10 minutes.
This will be a sticky dough- scrape down the sides of the bowl and dust it with flour (tucking the flour all around like in the video.)
I preheat my over to 140 then turn it off. Then place the bowl with a towel over it in the over and let it rise for 40-60 minutes. It should double in size.
While its rising I prepare my sugar butter mixture:
1 cup of butter melted but not hot 2 cups brown sugar and 1/2 cup cinnamon
It will be a thick paste. I got the idea to make it this way after watching Cinnabon workers make one that looked this way!
When the dough has risen divide it into two and roll half into a rectangle, gently spread half the cinnamon mixture and then roll it up. Use dabs of water to get the end to stick to the roll (butter makes it slide- water makes it stick!)
I use a strand of dental floss to cut the rolls (see video) then let them rise in a warm spot for 45-60 minutes.
Bake at 350 about 20 minutes but it will vary depending on the size you cut them, they should be golden brown on top.
I let them cool just a bit before adding my cream cheese frosting. SOOOOOO GOOD!
