I wanted a caramel filling that would be buttery and soft at room temperature but hold it's shape when chilled. This not only was super easy to make (you will need some of the Best Buttercream on hand) but it worked so well in the center of my Cake Pucks.
Easy Caramel Filling:
Small bag Werther's soft caramels (4.5-5 oz)
2 tsp Water
About a tsp Vanilla (or flavored extract)
dash of salt
1/2 cup homemade buttercream
Open the caramels and put them in a glass or microwave safe bowl. Add 2 tsp water then microwave for 30 seconds, stir, then microwave another 15 seconds until completely melted.
Add your vanilla and let it cool (I kept stirring it to move it along. You don't want your buttercream to melt when you add it.)
Once its cooled add your buttercream and stir it until completely combined.
That's it! No boiling or candy thermometer necessary. If you know me I love to keep the baking EASY.
Store in an airtight container. I keep it in the fridge but it's easiest to use at room temp.
To use it as a center in your Cake Pucks use your Puck Press to core a circle in your filling and pipe the caramel in. Put it in the fridge until completely chilled so it will hold its shape when you dip it in the chocolate.
